Rancho La Puerta (Baja Mexico)
Orange Walnut Bread

Makes 2 loaves

4 cups of warm 1% milk
2 tablespoons dry yeast
2 tablespoons sugar
2 tablespoons salt
2 tablespoons cold pressed oil
2 tablespoons honey
2 tablespoons orange zest
1/2 cup fresh orange juice
2 cups whole wheat flour
1 cup semolina Flour
4 cups unbleached flour
1 cup chopped walnuts

Mix milk, sugar and salt. Sprinkle on yeast. Let sit for 10 minutes or until yeast if frothy.

Mix all the remaining ingredients with the milk mixture. Turn dough out on to a floured board. Knead dough until elastic. Place kneaded dough back into bowl. Cover with a tea towel. Place bowl in a warm place. Let it sit until double in size, about 1 hour.

Once double, turn out onto a floured board. Knead slightly, then spread dough into a rectangle. Roll up into a loaf. Seal edges by pinching dough together.

Place in oiled loaf pans. Cover with tea towels. Set in warm place to rise until double; about 40 -50 minutes.

Bake in preheated 375 degree oven for one hour, or until tops are browned and loaf sounds hollow when tapped.

Cool loaves on wire racks. Use knife to loosen around the edges. Cut slices using a serrated knife with a sawing motion.
